Daal Baati Churma


    DAAL BAATI CHURMA

{TRADITIONAL FOOD OF RAJASTHAN}






Dal Baati Churma is the most popular dish in Rajasthani cuisine. This meal is an esteemed part of every Rajasthani household. This 3 in1 delicacy is a typical Rajasthani treat. A platter of sweet Churma, spicy Dal and Baati, is one such traditional combination.

Ingredients
  • FOR  BAATI

  1.  ¼ tsp salt
  2.  ¼ tsp baking powder
  3.  ¼ cup ghee / clarified butter
  4.  water to knead
  5.  2 cup of wheat flour (atta)

  • FOR  DAAL
  1.  ¼ cup masoor dal
  2.  ½ cup moong dal
  3.  ¼ cup chana dal (SOAKED FOR 30 min)
  4.  3 cup water
  5.  1 tsp jeera
  6.  3 tsp ghee
  7.  1 tsp ginger garlic paste
  8.  ¼ tsp kashmiri red chilli powder
  9.  1 pinch Hing
  10.  1 tomato (FINELY CHOPPED)
  11.  1 green chilli (SLIT)
  12.  2 tbsp coriander (FINELY CHOPPED)
  13.  ¼ tsp garam masala
  14.  1 tsp mustard
  15.  1 onion (FINELY CHOPPED)
  16.  ¼ tsp turmeric / haldi powder
  17.  1 cup water
  18.  Salt (AS PER YOUR TASTE)
  19.  4-5 cloves/ long
  20.  1 bay leaf/ tez patta
  21.  2 dried red chilli
  22.  2 green elaichi/ cardamom
  23.  2 black elaichi/ cardomom
  24.  1 tbsp lemon jiuce


  • FOR  CHURMA:
  1. ¼ tsp cardamom powder
  2.  3 tbsp powdered sugar
  3.  2 tbsp cashew & almond (CHOPPED)
  4.  2 tbsp of ghee (clarified butter)
  5.  ¼ cup suji
  6.  1 cup wheat flour 

Directions

  • FOR  BAATI
  1.  The first step to prepare baati is, take a large bowl and add 2 cup wheat flour, ¼ tsp salt, ¼ tsp baking powder &  ¼ cup ghee.
  2.  Mix it well and make sure that the prepared dough is moist.
  3.  In this step, you need to add water (as required) and kneed the dough
  4.  Make a small ball sized dough and roll with mark '+' on it
  5.  Now take an appe / appam pan and place the rolled baati in each mould
  6.  Cover the pan, place it on the low flame for 30 mins and cook the baati from all sides
  7.  After 30 mins take out the baati and dip it in ghee for a softer texture.

  • FOR  CHURMA:
  1.  Take a deep bowl, add wheat flour, suji, and melted ghee and mix it properly.
  2.  Now, add ¼  cup of water in the mixture and knead it well to make a stiff dough.
  3.  Divide the prepared dough into 10 small balls.
  4.  Now take a dough ball in your palm and shape it into the shape of your fist & press your fingers in the centre of each portion of the dough or muthies.
  5.  Now take a frying pan, pour oil, put it on low heat and fry the prepared muthies until golden brown. 
  6.  Drain the excess oil and allow them to cool.
  7.  Grind the fried muthies in the blender into a fine powder.
  8.  Pass the fine powder through a sieve and separate the solid part.
  9.  Blend the separated solid part again. (follow this step again and again till you get a   fine texture). 
  10.  Add melted ghee, almond, elaichi powder, powdered sugar, mix it well and keep it aside.
~YOUR CHURMA IS READY~


  • FOR  DAAL
  1.  Take a pressure cooker, add 5 cup water, well-washed daals, haldi powder, salt and mix it well. (pressure cook for 4-5 whistle)
  2.  Allow the cooker to cool, release the pressure and then open it.
  3.  Take a pan, add ghee and heat it.
  4.  Now add cloves, jeera, mustard, dried red chilli, tez patta, green & black elaichi, hing and saute for few seconds.
  5.  When the seeds crackle, add chopped onion and green chillies (saute for 3 min).
  6.  Add chopped tomatoes and ginger garlic paste. Saute for 2-3 mins.
  7.  Now add coriander powder, turmeric powder, garam masala with 3 tbsp of water and mix it well.
  8.  Add some salt (as per requirement).
  9.  Cook on a medium flame for 3-4 mins. Stir occasionally. 
  10.  Add the cooked spices & onions to the cooked daal and mix well.
  11.  Cook the daal on medium flame for 2-3 mins.
  12.  Remove from heat. Add lemon juice and mix well and keep it aside.

~~FOR SERVING~~

  • pour ghee over the hot daal.
  • dip the baati in the ghee.
  • pour ghee over churma.
  • serve hot with onion, lemon wedges and green chillies.

We got to learn a lot from our sources. seeing all these famous blogs on Indian food made our hearts warm X) although we just started, we wonder when people will start pouring in. we just started our journey and we have a huge bundle of things we want to correct in our blog~(o-o)~
